Trader Joe’s Hack: Brussels Sprouts, Lemon and Egg Pizza Margherita
One of my favorite quick meals is to hack a Trader Joe’s frozen Pizza Margherita. It’s a delicious, thin crust pizza that only takes about 10 minutes to cook. It also serves as a great “blank canvas” to use up leftovers. I had brussels sprouts, lemons and prosciutto on hand, so that’s what went on top. You can try this with spinach, arugula, leftover chicken or sausage – the possiblities are endless.
The lemon is what really makes this hack special. Be sure to cut the lemons as thin as possible – if they are too thick, they’ll be bitter. Skip the prosciutto and serve with a side salad and you have a great vegetarian meal!

You’ll need a Trader Joe’s frozen Pizza Margherita, olive oil, brussels sprouts, chili flakes, salt, pepper, egg, lemon and prosciutto (optional but delicious).

Slice half a lemon as thin as you possibly can. The sharper your knife is, the easier this will be. Cut each slice into half and pick out any seeds.

In a small bowl, toss the shaved brussels sprouts with olive oil, salt, pepper and chili flakes.

Mix it all together.

Remove the frozen pizza from the box. I love the little discs of cheese because I know how melty and delicious they’re going to be later.

Top with the brussels sprouts.

Spread them evenly over the top of the pizza.

Top with lemon slices and bake for 8 minutes.

Remove the pizza from the oven. Move some of the brussels sprouts and lemon slices in the center toward the edge of the pizza to make a little “well” for the egg to sit in. Crack the egg in and bake an additional 7-10 minutes, until egg white is set and yolk is still runny.

I seriously hate any type of uncooked egg white. It freaks me out. It makes me dry heave. So, when I take the pizza out of the oven I throw a plate on top of the egg. The residual heat sets up any uncooked white on the top. It’s an optional step. You could also just fry an egg in a pan and throw it on top.

ta-da!

I love the little char the lemons and the brussels sprouts get.

Then, if you like, throw a few thin slices of prosciutto on top.
Because, prosciutto.

MMM.

I mean, c’mon.
Brussels Sprouts, Lemon and Egg Pizza Margherita
Ingredients
1 Trader Joe’s Pizza Margherita
1/2 lemon, sliced very thinly then halved, seeds removed
1 cup shaved brussels sprouts
1-2 tbsp olive oil
chili flakes (optional)
sea salt and freshly ground pepper
1 egg
4-5 slices of prosciutto (optional)
Directions
Preheat oven to 425F. Remove pizza from packaging and set aside.
In a small bowl, toss brussels sprouts with olive oil, chili flakes, sea salt and pepper to taste. Spread evenly over the top of the pizza. Place lemon slices on top.
Bake for 8 minutes. Remove from oven and move the brussels sprouts and lemons toward the edges of the pizza to make room for the egg. Crack egg into the center and cook an additional 7-10 minutes, until egg is cooked as desired.
Remove from the oven and top with prosciutto if desired.
