I love experimenting with different flavor combinations, especially unexpected ones. And especially when it’s a twist on a classic that everyone knows. This green tea and sour cherry Rice Krispie treat is a perfect example of that.

Or I could just be crazy. Boop!

A note about green tea powder – this isn’t the same as just a bag of green tea from your reg’la grocery store. San Diego locals – you can find the matcha green tea powder at Mitsuwa. Innernets, you can find it at your favorite Japanese market or on Amazon.

You can find the dried cherries at Trader Joes. Sometimes you can find them at your reg’la grocery store but make sure you’re buying actual dried cherries, not dried “cherry flavored” craisins. I made that mistake. Ugh. I’m still kicking myself.

You’ll need tart dried cherries, rice krispies, marshmallows, sea salt, green tea powder, butter and a little fresh ginger.

Roughly chop the dried cherries and set them aside. Also, butter your 8×8 pan and set it aside.

In a large pot, melt the butter.
I recommend taking the extra 10 minutes to brown the butter. It adds a depth of flavor that reg’la melted butter just doesn’t have! Cook it over medium heat until the butter solids start to brown and it begins to smell nutty and delicious. Keep an eye on it though – don’t burn it or you’ll have to start over.

Turn the heat to low and add in the marshmallows.

Whisk the marshmallows constantly. Once most of them have melted, remove the pot from the heat and let the residual heat from the pot melt the rest.

Once the marshmallows have completely melted, add in the ginger, sea salt and green tea powder. Whisk to combine.
(BTW, I love this little silicone whisk! Clean up is much easier.)

Now it’s time to work quickly – add in the cereal and begin to gently incorporate with marshmallow mixture. Use a silicone spatula or a lightly oiled wooden spoon to make your life easier. It’s all kinds of sticky.

Stir in the cherries.

Place the mixture in a buttered 8×8 pan.

Dust with a bit more green tea powder, if desired, and let cool.

That’s it! I love the little bits of chopped cherry poking through.

The green tea flavor is quite subtle – it’s more of an after taste. If you want a stronger tea flavor, by all means, add more tea!

 

Green Tea and Sour Cherry Rice Krispie Treats

makes 1 – 8×8 pan (9 large treats) in 30 minutes

Ingredients

6 cups Rice Krispies (about 1/2 10oz box)
1 stick unsalted butter
1- 10oz bag marshmallows
2 tsp matcha green tea powder (found at Japanese markets and the Amazons)
1/2 tsp grated ginger
1/4 tsp sea salt
1/2 cup dried tart cherries, chopped roughly

Directions

Butter an 8×8 pan.

Melt butter in a large pot over medium heat. Optional delicious step: take an extra 8-10 minutes here and brown the butter – cook it until it smells nice and nutty (but makes sure you keep an eye on it so it doesn’t burn – you’ll have to start over).

Turn heat to low and add in marshmallows. Whisk constantly until marshmallows have most of the marshmallows have melted, then remove the pot from heat. Continue to whisk until the residual heat has melted all the marshmallows. Add in green tea powder, ginger and sea salt and whisk until combined.

Working quickly, use a silicon spatula or a lightly oiled wooden spoon to stir Rice Krispies into marshmallows. Add in chopped cherries. Stir quickly to combine.

Place mixture in prepared 8×8 dish and let cool. Store in an airtight container at room temperature for a few days (LOL). They won’t last that long.
