I’m still obsessed with all things Slap Ya Mama ever since my good friend Kevan sent me their seasonings.  One of my favorite go-to quick comfort meals is shrimp and grits, so I was super excited to use the Slap Ya Mama Cajun Fish Fry on the shrimp!  It only takes a few minutes to fry up shrimp and quick grits are… well… as the name indicates… QUICK. I decided to add a little Asian twist and use some kimchi juice to flavor the grits.

I apologize in advance for how easy this recipe is, because you’ll be eating shrimp and grits for weeks. I know I was lol. All you need is fish fry, kimchi, heavy cream, grits, cheese, shrimp.
Also, I’m pretty sure you can’t call yourself Asian unless you have a set of those bowls with that red typical Asian print on it lol

If I don’t have chicken broth on hand, this is what I use in a pinch. Be careful when using bouillon, it’s significantly more salty than just using broth so adjust your seasonings accordingly.

Puree 2 cups of kimchi with 1 cup of water. You can do this in a blender or a food processor but it’s such a small job I used my hand blender.

It doesn’t take too long, maybe 20-30 seconds of blending.

Strain the puree through a fine mesh sieve or cheesecloth. The result is kimchi brothy deliciousness.

Bring kimchi broth and chicken broth to a boil. Slowly add in the grits while stirring. Add in cheese (if using, and go easy on it since the kimchi broth already has a lot of salt content) and cream and let simmer until thick and creamy.

While the grits are simmering, get started on the shrimp.

Dredge the rinsed shrimp in your favorite fish fry. I use Slap Ya Mama Cajun Fish Fry.

Drain them on paper towels. Try not to eat them all. I know you want to because I wanted to.

Spoon the grits on a plate or a shallow bowl. Top with additional kimchi and add the shrimp.

Fried Shrimp and Kimchi Grits

Ingredients

makes 4 servings in about 20 minutes

for the grits

2 cups of kimchi
1 1/4 cups chicken broth
1 cup quick grits (not instant grits)
2 tbsp shredded cheese (optional)
1/2 cup heavy cream

for the shrimp

1 1/2 lbs shrimp, peeled and deveined
Slap Ya Mama Cajun Fish Fry (or your favorite cornmeal-based fry breading)

Directions

for the grits

Combine 2 cups of kimchi with 1 cup of water and puree. Strain through a fine mesh strainer or cheesecloth. This should leave you with 1 1/2 cups of kimchi broth. Discard leftover kimchi.

Place kimchi broth and chicken broth in a saucepan and bring to a boil. While stirring, slowly add in grits. Bring back to a boil, reduce heat to medium and add in heavy cream. Cover and let cook for about 15-20 minutes, stirring occasionally. Add more cream if necessary – grits should be tender and consistency should be thick and creamy.

Rinse and shake excess water off of shrimp. Dredge in fish fry. Fry in hot oil (make sure it’s hot – place the handle-end of a wooden spoon or a chopstick in the oil, and if tiny bubbles form around it steadily, the oil ready). Drain on paper towels.

put it all together

Spoon grits on a plate or bowl. Top with kimchi and fried shrimp. Go to town.

Notes

Warning – this gets salty fast. Between the kimchi broth, the chicken stock and the salt in the cheese. I don’t add any additional salt to this and you shouldn’t either, unless you want your fingers to swell and your blood pressure to rise.
