It’s Monday again! Here are some of FMITK’s favorite meatless options:

Spicy Roasted Brussels Sprouts

This is by far one of the most popular recipes on my site, which is surprising to me because of how simple it is! The basics of this recipe are so versatile, it works with almost ANY veggie, you’ll just have to adjust the cook time accordingly. I’ve done this with kale, broccoli, broccolini, cauliflower, potatoes… the possibilities are endless! Recipe here.

Chai-Spiced Pickled Grapes and Quinoa Salad

Super light and refreshing – if you don’t want to wait for the grapes to pickle, just throw them on 🙂 Recipe here.

Roasted Broccolini and Farro Salad with Almond Gremolata

Another light salad, this one whips up quickly, and uses the same technique for roasting the broccolini as the brussels sprouts mentioned above. Feel free to use your favorite veggie here – broccoli, cauliflower, brussels sprouts, kale. Anything! You can also switch up the grain – don’t like farro? Don’t know what farro even is? Use quinoa, cous-cous, barley, rice, even oatmeal! Recipe here.

Who doesn’t like falafel? It’s quite the hearty meal, and great if you love dressing up your food with different sauces. Try sriracha or your favorite spicy condiment on this. Store-bought tzaziki or tahini sauce is also delicious on this! Recipe here.

Swiss Chard, Mushroom and Lemon Lasagna

Hearty and delicious, this vegetarian lasagna is chocked-full of mushrooms and will please even your most carnivorous eater! I’m not a fan of red sauce in lasagnas, so the bechemel used in this version makes it my favorite. Recipe here.
