FMITK Goes Glamping!
Before this trip, the last time I went camping was 6th grade in the form of a somewhat mandatory field trip. Needless to say, I had no idea what I was in for. I was in charge of the menu for the weekend, so I planned the meals based on the conditions – no sink, no oven, raccoons, lots of wind and a couple of grills. I tried to prep as much of the menu as I could before arriving, so all we had to do was throw stuff on the grill.

Night 1 Dinner: Beef and Veggie Kebabs with Tahini Lebneh Dip and Garlic Yogurt Sauce, Tabbouleh, Grilled Baby Squash
Day 2 Breakfast: Scrambled Cheese Eggs, Bacon, Hashbrowns, Mimosas
Day 2 Lunch – Turkey Burgers, Brats, Sesame Aioli, Pickled Minted Onions, Blackberry Mustard, Kimchi Cabbage Salad
Day 2 Dinner: Grilled Ribeye with Garlic, Butter and Parsley, Smashed Potatoes, Mexican Corn
Day 3: I was packed up and ready to go before sunrise. I wanted to set myself on fire every time I used the port-o-potty. I couldn’t hang.

Had so much fun and an awesome time eating delicious foods! And girl you know you don’t have to tag those photos lol!
This is adorable, especially the matching all plaid picture, haha.
And camping food always seems like it tastes better than food made indoors! Not sure if its cooking over fire or just being really hungry because it limits my access to snacks….and by always I mean the one time I went camping 😀
