Salt & Pepper Shrimp

Serves: 4 servings
  • 1 lb shrimp, tail-on, peeled and deveined
  • 2 tbsp cornstarch
  • 1 1/2 tsp freshly ground pepper (I used a combination of black and white pepper)
  • 1/2 tsp sea salt
  • 2 cloves garlic, chopped
  • 1 Serrano chili, finely chopped (seeds removed for less heat, if desired)
  • 2 stalks scallions, sliced, plus more for garnish
  • lime wedges for garnish
  1. Pat the shrimp dry and toss with cornstarch, ground pepper and sea salt.
  2. In the same pan with the scallion oil, saute the garlic, chili and scallions until fragrant, about 1 minute. Add in the shrimp and saute until cooked through, about 1-2 minutes per side.
  3. Serve over crispy scallion coconut rice with additional fresh scallions for garnish. Squeeze a wedge of lime over the top to finish.
