Bibingka Waffles

Serves: ~6 waffles
  • 1 cup rice flour (mochiko)
  • 1 cup all purpose flour
  • 6 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp cinnamon
  • 2 eggs
  • 1 cup coconut milk
  • 1 cup whole milk
  • 2 tbsp unsalted butter, melted, plus additional for waffle maker
  • shredded cheese (I used Parmesan)
  1. Combine the rice flour, all purpose flour, sugar, baking powder and cinnamon in a medium bowl. In another bowl, combine the eggs, coconut milk, whole milk, and melted butter. Pour the wet ingredients over the dry and mix until just combined - a few lumps are okay.
  2. Place batter in the waffle maker and top with a couple tablespoons of shredded cheese. Cook waffles according to your waffle maker's instructions. I used about 1/4 cup of batter for each waffle.
