Bacon Wrapped Blue Cheese Stuffed Dates

That’s a mouthful of a title for a recipe with only 3 ingredients… all of which happen to be listed in the title. Bacon. Blue Cheese. Dates.

This is one of my favorite appetizers. Prep is about 10 minutes and cook time is about 25. Sometimes I make these and just have them for dinner with a salad.

I’m lying about the salad.

Make these, though. They’re simple and delicious!

Bacon Wrapped Blue Cheese Stuffed Dates

adapted from the guy at the farmer’s market that sells me the dates
makes 12 dates in 35 minutes

Ingredients
12 large Medjool dates
6 slices of bacon (not thick sliced)
5oz  block of blue cheese

Directions
Preheat oven to 450°. Split dates with a knife and remove pit.

Stuff date with blue cheese.

Wrap date with 1/2 a strip of bacon. Secure with a toothpick if you like (I didn’t because I didn’t have any toothpics, but I can see how it would help).

Place the dates on a parchment-lined baking sheet. Roast until bacon is crispy, about 15-20 minutes, turning once half way.

 

Notes

I’ve added crushed almonds to the blue cheese mixture. It’s great for texture and provides a nutty flavor that goes well with the bacon and sweetness of the dates.

Even though they’re great alone, try drizzling on some balsamic glaze. The bottled stuff from Trader Joe’s is awesome.
